I cooked this dish quite often, as I love to eat the soft black fungus with white rice.
This recipe appeared in Mum's Favourite Dishes cookbook (妈妈暧心菜) too. It is such a simple and comfort dish. Three main ingredients in this dish are chicken, black fungus and ginger, and I addded needle mushrooms.
Recipe adapted from Mum's Favourite Dishes cookbook (妈妈暧心菜)
Ingredients:
1/2 chicken, chopped in chunks
2 pieces of large black fungus, soaked til soft and cut into shreds
some needle mushrooms, soaked and tied knot
1 thumb of ginger, shredded
Seasonings
1 tbsp sesame oil
1 tbsp light soy sauce
1 tbsp oyster sauce
1 tbsp shao xing wine
1 tsp sugar (Omitted)
Steps:
1. Heat up sesame oil, fry ginger shreds til fragrant. Add in chicken, oyster sauce and light soy sauce. Stir-fry over high heat for 5~8 mins.
2. Pour in black fungus, needle mushrooms and shao xing wine. Add 1 cup of water. Braise over medium heat for 10 mins or until chicken is tender. Serve warm with white rice.
Yummy.. I like to drink the sauce too... Hehe...
ReplyDeleteAh tze, want to ask you. Purple sweet potato, u get from which ntuc? How does it look like? How much ah? I only see sweet potato vietnam purple skin but inside is yellow flesh one.
I love black fungus a lot and I also used it very often in my cooking too especially on this recipe. It is truely delish. Slurpppp....

Hanushi, I get the purple sweet potato from Bukit Timah Plaza NTUC Finest. It skin is purple in colour and the fresh is purple too. The price depends on it weight, usually they packed it 3-4 pieces in one pack with not more than $2. I prefer to buy from wet market as the purple sweet potato there is better quality, can last longer than what I get from NTUC finest. The last round I got the purple sweet potato was from the wet market near to Chinese Garden MRT, the one opposite the swimming pool.

ReplyDeleteOh, this sounds amazing! I LOVE all these flavors...and even though I don't think I could find black fungus and needle mushrooms around here, I'd just substitute and still have a fabulous dinner...mmmmmmm.
