Strawberry Butter Cupcake



I like this baking because first time getting a crispy topping with moist cake. I think time spend infront of the oven was worthy!

Ingredients:
1 pack butter cake mix (300g)
2 eggs
150ml milk
60g butter
strawberries, chopped

Steps:
1. Preheat oven to 160C.
2. Beat eggs and milk on low speed with electric mixer. Gently add sifted cake mix into mixing bowl. Add butter and mix on medium speed for 2 mins. until ingredients combined. Stir in strawberries.
3. Scoop batter to prepared cupcake's patty cases.
4. Bake for 15-18 mins.

  
The top of butter cupcake is crispy, the cake is soft and moist with strawberries flavour.

luckily my side-by-side two doors fridge is large enough to keep two cakes...
however, am I going to eat all these cake in few days time...
can't image all breakfast, lunch, and dinner are...cakes.
oh...no, I don't want to get fat

Strawberry and Cranberry Sponge Cake


My first self baked birthday cake for tomorrow. Recipe from Rachel Lane and Carla Bardi "Cakes: over 200 recipes from around the world".


Modified on the filling as not enough strawberries :) I substitued with can cranberries sauce, ricotta and cream cheese (yes, the leftover from previous baking)


Top with strawberries, the cake looks so happy! Happy Birthday to me ^_^
When posting this, I realized there are some people celebrating their birthday in these few days as well... wishing all a Happy Birthday too!!

Ricotta Cream Cheese Cheesecake with Sour Cream


First time trying on Ricotta full fat whey cheese, the result of the cheesecake is light, fluffy and creamy as mentioned on Joy of baking.com website. 

I actually baked two trays of cheesecake, one tray of thin layer "test cheese" tray which I placed at the bottom layer of the oven and another on the middle layer. The cheesecake at the middle layer was a disaster, it collapsed and broken into two when I dislodged it from baking tin. The cheesecake should be in the fridge for 6-8 hours but my patient just last for merely 4.5 hours. Lesson learn.

Recipe modified from Joy of Baking
Cheesecake:
500g fresh whole milk ricotta
400g cream cheese (full fat), room temperature
100g caster sugar
1 tbsp corn flour
4 large eggs, room temperature
Zest of orange
1 tbsp vanilla extract

Steps:
Is too long to write, please refer the steps as in Joy of Baking.

Cream source:
30g cream cheese
50g light sour cream
30g icing sugar


1. mix cream cheese, sour cream and icing sugar in bowl, beat till smooth.


Decorate:
I cut cheesecake into a few squares, place one at the bottom. Top with cream mixture and lay some strawberries on it. Spread cream mixture to cover the strawberries and top with layers of square cheesecake. You can decorate as desire.

with good combination of ricotta and cream cheese, the texture of the cheesecake is light, fluffy and creamy. For sure I'll try this recipe again.

Fruit and Cream Tart


A nice tart for afternoon tea always calm me and my son's mood. Today Gabriel took a good nap and delighted to see this fruit and cream tart awaiting him when he woke up. The topping of the tart are grapes and strawberries, his favourite.


To me, fresh fruits will be a better choice then can fruits ... able to attract my boy to eat it! The combination of cream cheese and sour cream are wonderful! Gabriel asked for more after he finished his ^_^


Recipe modified from Delcious Quiches & Flans, confident cooking


Crust:
8 fl oz
2 tbsp caster sugar
90g butter, chopped
1 egg
1tbsp vanilla essence

1. preheat oven to 190C. Mix flour, sugar and butter in mixer. Using pulse action, mix the mixture till fine and crumbly.
2. Add egg and vanilla essence, mix until all combined. Knead mixture gently to form a smooth dough.
3. Cover the dough and refrigerate for 30 mins.
4. Brush melted butter on tin. Roll out pastry between two sheets of plastic wrap. Press the pastry down to tin using hand.
5. line tin with baking paper, spread dried beans over paper. Bake for 10 mins, remove from oven and discard paper and beans. (I've photo on how I lined the tin using baking paper in my Chicken Mushroom Quiche with Herb Pastry) Return pastry to oven for a further 10 mins until pastry lightly browned. Leave to cool.

Filling:
200g cream cheese
1 cup (200g)  sour cream
100g icing sugar

1. mix cream cheese, sour cream and icing sugar in bowl, beat till smooth.
2. Spread cream mixture into the prepared crust.
3. Decorate as desire.
4. Refrigerate for 2 hours and is ready to serve.


I've to admit that I'm not good in moulding the pastry, yet to master the techniques for the perfect pastry making. See there is a "big" hollow at the bottom.

Aspiring Bakers#1: Nutmeg Chiffon Cake

Nutmeg Chiffon Cake top with Walnuts and Oats

Today is a happy day to bake a special chiffon cake because my 2.5 years old son won his first prize this morning. He and papa participated in the Dads' Ministry Father and Kids Bonding Event "Race On-Wheels Challenge", the prizes given not base on who win the race but overall father and kids performance. My son rided his bicycle by himself... he won for overall performance. He was the youngest participant.


 
Bottom of Nutmeg Chiffon Cake, some of the walnuts sank to the bottom. A Walnut fall off when I dislodged the cake. I crashed walnuts a bit, so Gabriel is able to eat it too.


Recipe modified from penguin cake mix
Ingredients:
500g cake mix
7 eggs or 400g eggs
100g water
3 tbsp vegetable oil
1/2 tbsp nutmeg powder
crashed walnuts and rolled oats

steps:
1. preheat oven to 175C.
2. mix eggs and water in mixing bowl with low speed for 2 mins.
3. gradually stir in sift cake mix, nutmeg powder and oil. Mix in high speed for 10 mins.
4. pour in baking mould and top with crashed walnuts and rolled oats.
5. Bake for 50 mins.



Inspired by Min coffee almond chiffon topping, try to do similar with my nutmeg chiffon cake topping ^_^

 Not a perfect dislodged as a bit of peeled off at some portions.

Red Wine Herbs Chicken



Red Wine Herbs Chicken recipe is my own creation. I always serve this dish when I need to rest more or my friends are coming over for dinner because ... what need to be done is place the chicken in the oven for 30 mins. Of course the slicing, chopping parts have to take place, but no messy clean up after cooking.

It is best to use chicken wings or drumsticks, the meat will be tender after baking. Breast meat is not advisable for this dish.  

Ingredients:
8 Chicken wings
1 onion, sliced
1 tomatoes, sliced
1 clove of chopped garlic
2 slices of finely chopped ginger
2 potatoes, sliced
1 carrot, sliced
1 lemon grass, finely chopped
coriander
1/2 cup water
red wine & garlic source

steps:
1. marinade chicken in 4 tbsp red wine & garlic source, garlic, ginger & lemon grass for 1 hour.
2. preheat oven to 230C.
3. line potatoes and carrots in baking tray, place the chicken on top. place the tomatoes and onions on chicken. This will prevent chicken from over browned and keep the chicken moist. Finally top with coriander.
4. stir in another tbsp of red wine source in water and pour into baking tray.
5. bake for 30 mins.

This dish is appetizing with source to go with rice.

Homemade Fish Pie



This recipe is taken from Annabel Karmel Baby and Toddler Food Diary with modifications. I've baked it for many times and is a sure win recipe for Gabriel to eat his meal ^_^

Ingredients:
2 big potatoes
small portion cod fish, cut into small cubes
1/2 carrots, cut into small cubes
1 slice butternut squash, cut into cubes
1/2 palm size broccoli
100 ml milk
1/2 tbsp butter
1 pcs of soft cheese

steps:
1. peel and slice potatoes. Boil potatoes, carrots, butternut squash and broccoli with little water in pot till vegetable is soft. 
2. Stir in milk, butter and cheese, use masher to mash till blended. Mashed vegetable should be lumpy and smooth.
3. Line up cod fish in tin, scoop in the mashed vegetable. Use fork to mark the surface with ridges.
4. Bake at 200C for 20 mins. The pie's top should be browned but not burn.

Soft fish pie. Quick and easy meal that provide the nutrients for toddler.

终於。。。用上了!


The toilet seat is soft with handles for little hands. There is a half backing behind to prevent toddler from falling behind when use.

My son is able to urinate without assistance since beginning of this year. He find it very hard to sit down when come to passing motions. The potty made his bottom painful, it always create a  red round circle on his bottom whenever he tried to use the potty. This deter him from using the potty, however hard I tried to persuade him.

These few days he keeps telling me he is a big boy and doesn't want to wear diaper anymore. He took the diaper off when I help him to get ready for school. Yes, he didn't wet his pant at school. I remembered he told me he didn't want diaper when he was ready to urinate in the potty many months ago and at that point of time I was foolish to tell him that he must wear it because he yet to know how to use potty for passing motions. This time I didn't want to miss the change again and let him go without diaper even when he took his nap.

I bought the junior toilet set for nearly a year and never have a single thought to move my son straight to the big toilet. I was thinking of gradually let him sit on the potty then junior toilet set. Today I let my son see the junior toilet set and he is happy to sit on the "comfy" toilet. Finally, he used the toilet to do his poop.

Yoghurt Bluberry Muffin






A day to go without rice for Gabriel, again.
Today is a special day which I want to record for Gabriel.
He started pre-school on 8 Nov and had to stop due to the outbreak of HFM in his class. Today can be consider his third day into school life, initially his teacher told me he might need 2 weeks to settle down. However, God is really good, He turns everything around for Gabriel, my brave 2 1/2 years boy proved his teacher wrong.

He was crying when he entered the class but stop when he was handled by another teacher ... and everything became good to better. When I peeked into his classroom, he saw me and I was shocked to find him so near the window where I was standing, he didn't cry but happily asked me to join him in class. I told him I couldn't do so and he kept telling me he was learning in school and bravely wave bye-bye to me when I told him I would pick him up later.

Gabriel is keen to learn, he communicates a lot to his teachers. Teacher told me he was good in Montessori activities. When I picked him up at the end of school day, he told me with his chubby face "I'm learning, mama! I'm learning in school.", there was lot of emotions within me when I heard it... my little baby has become a brave boy. He has stepped over another milestones.

ingredients:
1 pack of muffin mix
1 can of wild blueberry
250 ml milk
100 ml oil
2 eggs
2 cups strawberries yoghurt (60g each, flavour as you wish) 

1. Preheat oven to 200
2. Whisk eggs in bowl, stir in muffin mix, milk then oil until blended. Gently stir in blueberries and yoghurt.
3. Scoop batter into muffin cups and bake for 20 mins.

Pandan Chiffon Cake

Second time baking pandan chiffon cake, I'm satisfied with the end result. The rich eggs flavour make me want to have more of the cake. However, the cake sagged in the middle part after I dislodged it from the mould, anyone can tell me why?

ingredients: 1 pack of cake mix (320g), 7 eggs, 70 ml water, 70 ml oil.

1. preheat oven to 180
2. mix eggs and water at low speed, gradually add cake mix.
3. whisk batter at high speed and gradually add oil until well blended.
4. pour batter to tube mould, bake for 50 mins.
5. turn the mould over to cold and gently dislodge cake from mould.

Lotus Root Chicken Soup


My son loves soup. He will eat fast if I served him soup with his meal. I cooked the soup in traditional way, in slow cooker which takes 5 hours. I think it tastes better this way, the soup is sweet and tasty without any seasoning.

ingredients:
1/2 Chicken (portion as you wish)
1 sweet corn (my son likes sweet corn)
2 big tomatoes
2 onions
lotus root
mushrooms
2 carrots
3 potatoes
~10 dried peppers

Butter Cupcake


Recently not much baking but spent lot of time playing with my son. This Butter cupcake was baked weeks ago ^_^ when compared to my Lemon cupcake it was really a success. The temperature was set on 160 and baking time took about 18 mins. Initially I would want to decorate it with icing, however, my son woke up earlier than planned so... ^_^


These were the butter cupcake served to kids when we hosted the playgroup 3 weeks ago at home. All kids love my butter cupcakes!


Camping

Outdoor activity is always good in cheering up by boy. However, sometimes we have no control over the weather which left us with no choice but to change our initial plan.

One afternoon sometime in May, Gabriel was unhappy because he was unable to go playground due to the weather. I decided to let Gabriel set up his camp in the living room. We toppled the table and used colourful blanket to be his "tent",  he was excited. With torch light in hand he moved some of his soft toys into the camp and banned mama from going inside his "tent". It was fun to watch him explored the tent with his torch light. He discovered the light ring from the torch light could change when he held the torch light close or further away.

Gabriel's Drawings 1

Gabriel loves drawing since...yes I don't know since when. We provide him with various types of crayons, colour pencils, water paint, marker pens even to the extend to allow him use the window marker pens.

When he was much younger he drew on the wall, floor and on his toys especially his big toy car. Now he mainly draw on the paper. I seldom hold his hand to write or draw as my boy is a strong will boy who doesn't like people to direct him do anything which he doesn't feel comfortable. Recently I notice that my boy of 2 1/2 years old can recognize and translate the prominent features of things that he see through drawing and I must say he does it very well for his age.

JE's drew this picture in two separate days. One day he used water paint and the second day he used crayon.

I asked him: what are you drawing?
He told me: A tree
and then I can see his garden and his world.

2 Nov, 2010
JE woke up in the morning, tuck in a long deflated balloon on the rear of his pant, pretended he is the dinosaur. He went to the drawing board and drew spiral on the paper.

I asked him: what's that?
He said: spiky porcupine.
 

JE drawing sharp quills for porcupine. I'm impressed that he is able to recognize and translate the prominent feature of porcupine.

This morning JE talks to Ben 10 printed on his short pant "how are you Ben 10?" and he picked up the green crayon and drew a man feature.


I asked him: what is this?
He said: Ben 10, watch on his hand, wearing shoes also.


Hmm... this impressed me again. He didn't watch Ben 10 cartoon, but having Ben 10 pencils, eraser and pants which were given by aunty and grandma as gift. He can identify the Ben 10 colour which is mostly green and Ben 10 guy always wearing a watch and shoes.

Happy Birthday Papa!

Together with mama, Gabriel created his first birthday card for papa.

Gabriel chose this Pooh bear and friends Swensens Ice-Cream cake for papa. There was 乌竜 story about the cake delivery. Initially mama wants to gave a surprise birthday celebration for papa, however, 乌竜 mama thaught Friday was 30 instead of 29 and asked Swensens to deliver the cake on Friday. Anyway, when papa came back from Kuching on Friday night, only the balloons decoration awaiting, there was no sign of the cake...

Cake without candles as Gabriel taken all of them and broken most of them.
