Salmon Caviar, Avocado and Mango Roll


This finger food roll was created sometimes in early Jan, photos taken in the evening, the camera was without tripod. 

My family, especially my son loves smoke salmon and salmon caviar, most of the time in my fridge there will be a pack of smoke salmon because it comes in handy whenever I want to whip up a salad. That evening, I suddenly want some changes to the usual salad, I want something taste better than a vegetable salad, yet simple and easy to prepare. I created this salmon caviar, avocado and mango roll for my family, it was very delicious and this type of finger food I believe is a good party food too.  

I just love the intense taste of salmon caviar when it burst in my mouth! The combination of the salmon, salmon caviar, avocado, asparagus and sweet mango is just fantastic!

Ingredients:
1 pack of smoke salmon strips (about 5 long rectangular strips)
5 baby asparagus
1 small ripe mango, cut into long strips
2 tbsp of salmon caviar
1/2 tomato, cut into 5 long strips (can omit if you don't like, I add in because I want my boy to eat more vegetable ^^)
3 tbsp of mashed avocado
a pinch of salt
a pinch of crashed black peppers

Method:
1. Boil baby asparagus in a small pot of boiling water for 1 min. Take out and drain.
2. Open up a piece of smoke salmon rectangular neatly on a flat surface, place a piece of cook asparagus on top, a few strips of mango (as my son loves mango), one strip of tomato, a small teaspoon heap of mashed avocado, sprinkle with a pinch of salt, roll up the smoke salmon Swiss roll style. 
3. Place some salmon caviar on top (about 1/2 teaspoon), sprinkle with crashed black peppers. You may use a tooth pick to secure the food together if you need to (tooth pick punch through the smoke salmon and across all vegetables)
