Soya Sauce Chicken 酱油鸡


Missed this type of Soya Sauce Chicken, when I saw Mich of Piece of Cake posted her Soya Sauce Chicken, I know I have to cook it! But...I know my son will not take any chicken if he see the chicken meat in a whole piece. He think he can't chew the meat! I have a whole chicken in the freezer, what should I do? I don't like the idea of chopping either... Can I cook the whole chicken?


Then...da..da.. I used my newly bought Buffalo Rice Cooker! This is easy, boil the sauce until boiling and dip the whole chicken down! Cook for about 45 mins in "soup" function then switch it to "keep warm" mode and let it sit for another two hours to soak in the flavour. But lazy me didn't take the chicken out and let it sit for ...over night in the rice cooker and the skin and meat is a bit torn because of over cooking! 

I don't mind the ugly looking on its skin texture because for the first time my son finished a big piece of chicken drumstick!! This is how good the taste is! May be for the fussy eater like him, the over cooked meat texture is easier to munch and chew?!







Recipe adapted from Piece of Cake Original from Rasa Malaysia
Ingredients:
A medium size whole chicken, clean and wash
2-inch ginger (skin peeled and lightly pounded)
4 cloves garlic (lightly pounded)
2 stalks scallions (cut into 2-inch lengths)
2 star anise
1 cinnamon stick (about 2-inch length)
1 dried honey date (omitted, as I don't have it)
1 cup soy sauce (use 1/2 cup of soy sauce)
1/2 cup dark soy sauce
1 tablespoon Chinese rose wine (preferred) or Shaoxing wine
3 dashes white pepper powder
4 oz. (113 g) rock sugar
4 cups water (water level have to cover the whole chicken)


Method:
1. Add all ingredients (except the chicken) into the rice cooker (switch the rice cooker mode to cooking "soup") and bring it to boil, about 10~15 mins. Dip the whole chicken into the rice cooker and boil for about 45 mins.
2. Switch the rice cooker mode to "keep warm" and let the chicken continue simmer for about two hours to soak in the flavour.
3. Use a scissor to cut the chicken into serving pieces, serve immediately.

  12. wao... this is good. my son also doesn't like to eat meat because he not like to chew meat. of vegetable is ok. i done know why???? may be i have to try this see weather he eat the meat or not. ha...

    I am again tempted by your soy sauce chicken. It seems so easy to prepare with the multi function rice cooker and it is super delicious.
    I must cook this so I can save the soy sauce gravy and cook the lava egg later :D
