When I was still wonder how am i going to do with my pumpkin, Ann from Anncoo Journal posted her healthy yummy Pumpkin Yakult Jam! I'm happy to give it a try as I have yakult in my fridge but the yakult here only have two types, one is original and one is low fat yakult.
So I decided to add one orange juice into the yakult liquid to make up that 200ml. I'm using brown sugar as I don't have white sugar in hands. This is my first time making jam and I'm so glad that I give Ann's recipe a try as my son loves it so much! The jam is creamy and yummy with that natural citrus pumpkin flavour! Thanks Ann for the recipe!
Ingredients:
350g pumpkin (Butternut)
200ml yakult + one orange juice
2 tbsp brown sugar
Method:
1. Steam pumpkin with skin on until soften, scoop the pumpkin fresh out with spoon. Blend the pumpkin to smooth. (Ann mentioned in her post the net weight should be 250g! I overlook this, I just used all my pumpkin)
2. Combine blended pumpkin, yakult, orange juice and sugar in a saucepan, stir well and bring to boil. Lower the heat and keep stirring until the pumpkin mixture thicken. About 20~25 mins.
3. Pour jam into a container, let it cool down before keep in fridge.
Hi Tze, Thank you for trying my recipe. Your pumpkin looks pretty not too dry like mine. I've have use this jam to bake a chiffon cake but ...sigh... slightly overbaked lol!
