Pineapple Tarts and Present


This year CNY I only baked three bottles of Pineapple Tarts. It was created on the eve of day seven of CNY, I baked it until 4 a.m! I didn't prepare for this bake, my previous baked needs QBB Ghee which I didn't have at the point of baking, then I remember Sonia's Pineapple Tart recipe which require only four ingredients: butter, flour, condensed milk and egg yolk. Well, it is indeed a very tasty buttery tarts! Thanks Sonia!

(I made 150 pcs)
350g butter
100g condensed milk
510g plain flour / all purpose flour
2 egg yolks

2 egg yolks, for egg wash
700g Pineapple filling (I used 1 kg, store-bought)

Steps:
1. Cream butter and condensed milk till light.
2. Add in egg yolk one at a time, and beat until combine.
3. Mix in flour, mix till become a soft and not sticky dough.
4. Divide the dough using a teaspoon, roll it into balls.
5. Flatten a piece of dough and place a piece of the roll pineapple filling in the middle. Bring the edges of the dough together and press lightly to seal. Roll it in between your palms to shape it into a roll.  
6. Place rolls on baking tray lined with parchment paper or paper casing.
7. In a small bowl, lightly beat the egg yolks.
8. Brush the glaze on the pineapple rolls with a brush.
9. Bake in preheated over of 200C and bake for 20 mins or until the rolls are pale golden brown.
10. Cool on wired rack before storing in airtight container.

  4. i also attracted by sonia's recipe, remind myself next year i wanna try this out too...:)
    wah, you worked until so "early" in the morning...tiring but it is worth yeah because the tarts are so nice...^^

    I baked 3 different pineapple tart recipes this year, but have yet to try out one with condensed milk. Yours look good!
